I have plotted a stress contour. But, the contour max/min are not what I wanted. I want to make sure stress above yield is plotted red. How to change contour max/min??

You should be able to use Thresholds in the Ranges form to do this. Check ON "Upper". Then, in this box, enter the value above which you want everything to be red. Then click Calculate and you should see your range adjust accordingly.
