Determine profile tolerance in constrained position

Hello, Not sure if this is off-topic or not, I'm assuming yes since it is not pc-dmis related.
The part shown in the pic has two 1/2 inch areas (rails) that are referenced as DATUM A.
The customer (who must not be named) has an overall profile tolerance of .010 to DATUM A.
I must constrain this Datum but I must also measure the profile of the surfaces (pockets included) on the same side.
From what I understand, the constraint has to be continuous across both Datum A areas (like a plate over the surface) but this presents a problem - how to probe the surface underneath that constraining plate.

Question:
1. Does the constraining plate need to be continuous over all the part's surface to include the Datum areas?
Or can one separate the two constraint areas separately as in the example model below?

2. What would be the best scenario to complete this surface profile task?
