So if we were to add beer to the food pyramid would beer be the foundation or the pinnicle? That's a tough one I think. Seeing as how the Egyptians paid their workers in beer I want to say beer is a foundation and supports all other food groups but there are those beers that are just so good that I want to say they are the pinnicle of food and that they represent the top of our culinary achievments. Decisions...decisions??????

You don't peel em' before you mash em'

Just wash em' and mash em' up.

Add a little garlic to that dirty mash and you've got it right. Leaving the skins on is healthier, I just never heard thm called dirty mash, it is how I make mashed potatoes all the time. Soo good. I love a good soup also, my favorites are potatoe, and a good chicken tortilla.

Cooter Pie (The Hunter's Delight)-

First you take a live cooter and wait for him to stick his head out from under his shell.
When he does, you grab it and whack it off.
Take a hatchet to the underside so you can get to the meat and remove it along with the liver, tripe and eggs (if he has any?). Set aside.

Ingredients-
1/2 cup of chopped bacon
2 medium onions
2 toes of garlic
1 stewed tomato, chopped
1 teaspoon of thyme
1/4 cup of flour
Fry all the above in a black iron Dutch oven.
Brown the flour.
Add water til it covers.
Stew down til the meat is falling off the bone and the liquid is thick.
Now make biscuit dough and drop small-sized biscuits over the top of the stew.
Stick it in a oven at 400 degrees and bake done (golden).
A hunter will come out of the woods to get this!

I figured that when you said you had to wait for it to pop its head out of its shell but no I hadn't ever heard a snapping turtle called a cooter.

I don't know if I'm happy I'm not redneck enough to know that or sad??? I have the whole series of "Duck Dynasty" recording on the DVR and I think my neck gets a little more red with every episode If you haven't seen it yet you need to. It's a bunch of millionaire rednecks with guns and dynamite.......It makes my heart swell with pride everytime I watch it
