Newer versions allow user to generate points from scans, so you might try Construct Point, selecting the scan and finding the points you want to generate a thickness from.

IF you set the scans to start/stop at the same angle and IF you set the scans to a specific number of points, both having the same number, then you SHOULD be able to get the 'thickness' at ALL of the scan points, scan1.pt1 to scan2.pt1 and so on.

They don't start at the same spot due to clamps in the way 

then you'll have to skip the aforementioned strategy and do it the old fashioned way with a series of points around inner/outer diameter. Thankfully COPY/PATTERN is your friend here.  

Can you pull one hit out of an adaptive circle scan? 
Then maybe use one of the many points from the scan to create a line from the center of the ID and then pierce it through the OD??? Make a line from the two points and dimension the length on the report? 

So I was able to get the measurement i was looking for using an assignment and putting in the equation to do the math then reporting that variable as a location.

That will work, but your mileage will definitely vary using a direct ID/OD expression. Any out of round condition or runout (concentricity) will have a direct affect on your results. 
Doing the pierce method should at least cut down on that possible error by 50% while also providing the warm and fuzzies for your operator knowing that its good in 4 places. 

Yes, I totally agree with you, but 99% of the parts we make are Polymers which are out of round by nature (not by much). As soon as we cut them off a billet they warp or grow due to stress in the material. So, taking many different measurements would be a nightmare to look at. It's one of the great joys of machining plastic seals. Most of the time are parts go straight to an oil field where the beat the seals in a pipe with a wrench "hammer" but for some reason they want them perfect lol.
