I'm more into smoking the meat, favorite would have to be Applewood, I even do this to my deviled eggs, boil them, cut them in half, take the yellow out and smoke the whites, a couple of weeks ago smoked a brisket and on the other side (cold smoked) the whites, Deeeeeeelicious.

Once in a while I get the BOLD version. It's just not the same.
I feel like BBQ alone is enough reason to move to Texas. Maybe that is the reason for the California mass exodus.
You know, being from the Midwest, I never really understood the big deal about BBQ. I just thought that any BBQ was good BBQ.
However, at the last place I worked there was a fella who cooked his own special recipe and would bring it in during pot luck lunches around holidays. OMG! It wasn't just a little better than any I have had before, it was a whole 'nother level. Now I get it.
